How do I prevent my Swiss roll from cracking?

The times where my Swiss roll has cracked, it's always been for one of two reasons: over-baking or over-handling the sponge (especially when it's still quite warm).

This is a very thin cake so it bakes quickly. Set a timer for 10 minutes and start checking with a toothpick. Handle the sponge very gently, and follow my two-step approach of steaming, then pre-rolling. This keeps it soft, flexible, and way less likely to crack.

Even if it does crack a little, don't bin it! It will still taste delicious, and you'd be surprised what you can hide with a little cream and icing sugar.

Why is my sponge sticking to the towel/paper?

Accepted Answer

Steaming the sponge can make the surface a bit tacky, and peeling off the tea towel or parchment paper can pull away the outer skin, giving it a patchy appearance.

To minimise this, dust generously with icing sugar before flipping it out onto the towel/paper. Don't stress too much as you can roll it with the browned side facing up to hide any imperfections inside the Swiss roll (no one will know!).

Can I use frozen strawberries?

I wouldn't recommend it! Frozen strawberries have excess moisture which can leak into the cream and prevent your Swiss roll from firming up. If you insist on using frozen, at least make sure you thaw them first, then drain off the liquid and pat well with paper towel before using.

Do I have to use gelatine in the filling?

You don't have to, especially if you're planning on serving this the same day. However, standard whipped cream (without gelatine) will soften with time and start to weep. If you want a Swiss roll that stays firm and holds its shape for several days, then stabilising the cream is definitely the way to go.

Can I make this matcha Swiss roll cake in advance?

Accepted Answer

Yes! This Swiss roll is best once it's had some time to chill. If you're making this for a special occasion, I recommend assembling it a day ahead of time. Then all that's left to do is plop it on a serving platter and decorate!
